Normally, if you have linked information in your workbook, the information is updated whenever you open the workbook.
Back in In Design we see this warning triangle which tells us that the table in the Excel file has been modified. Here is the table in In Design before (left) and after (right) the update.
Double-click on the triangle to automatically update the linked table. As you can see, the updated table lost its header settings.
This tip (7556) applies to Microsoft Excel 2007, 2010, 2013, 2016, 2019, and Excel in Office 365.

In this case, the best way to create the table is to import the Excel file into In Design, making sure that In Design creates a link with the spreadsheet.
